So all I did was lightly fry the diced chicken. To that added curry powder, crunchy peanut butter and a tin of coconut milk. Bring to a simmer and serve with rice.
It’s a great sauce that can be added to pasta, fish or anything of your liking.
I made it into a curry, added some chilli and topped with coriander. And naan bread goes splendidly well with it
