Tuesday night dinner

  1. 500g breast chicken
    Garlic
    1/2 cup panko breadcrumbs
    Parsley
    Preheat oven to 180 & line a baking tray with baking paper
    To a food processor, mince up chicken, garlic and parsley. Add breadcrumbs and roll into balls. Place onto tray and bake until golden

    Toss with salad

Peach slice

A quick and easy slice.  Simply combine melted butter with a vanilla cake mix. Combine and press into a greased lamington tin. This isbyoure biscuit base. Bake for about 15 mins. Remove and lay peach slices which have been drained well. Spread sour cream over. I also like to sprinkle either cinnamon sugar or mixed spice.  Bake again for about another 15 mins.  Cut into slices

You can add any fruit of your choice or whatever is in season.

I also like to make a blueberry slice.  Actually will post tomorrow

My fav dips

Today I made two different dips. .. the one on the left is a roasted capsicum dip and the one of the right is an asparagus dip.

So for the capsicum dip, to a food processor add store bought roasted capsicum,  greek yogurt & a dashnof smoked paprika. Process and serve.

For the asparagus dip, again to the food processor ( yes definitely a best friend) add a tub of sour cream, tin of drained asaragus and a sachet of spring vegetable.  Process. This dip is best served warm.

Too easy…too yummy…serve with pita bread, lebanese bread, crackers or vegies

Chicken Curry

Who doesn’t like curry? Exactly!  And when I make this, I make alot of it to freeze and as you can see have it for lunch.

So, simply lightly fry diced chicken.  To that add curry paste,  coconut milk or cream, fish sauce and lime juice. Serve with boiled rice and top with coriander.  (Today I am having it with the leftover pea and coriander rice I made )
